Puff Shack BBQ opened in St. Charles, Illinois in 2024 — born out of a shared obsession with great barbecue and the patience to do it right. This is the story of how a few friends turned a passion into a smokehouse worth talking about.
Friends, fanatics, and a big idea
Zach Fisher and his partners weren't looking to open just another restaurant — they were BBQ fanatics with hospitality industry experience who wanted to build something they'd actually want to eat at. In 2024, they brought that idea to life on Prairie Street in St. Charles.

Every cook begins with seasoning by hand — coarse pepper, salt, and a feel for the meat that only comes with real practice. The slow process isn't a gimmick; it's how the flavors get the time they need to develop.
